Jam Cake
- 1/2 c. pecans, chopped
- 1 c. margarine
- 2 c. sugar
- 1 c. blackberry jam
- 1 c. buttermilk
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 2 1/2 c. all-purpose flour
- 4 eggs, beaten
- 1 c. raisins, soaked in hot water, drain
- 1 c. fresh coconut
- Combine dry ingredients; set aside.
- Cream margarine and sugar.
- Add beaten eggs and buttermilk; mix well.
- Add dry ingredients; mix well.
- Add jam, coconut, raisins, vanilla and pecans.
- Pour into floured and greased cake pans.
- Will probably have to use at least 3 cake pans.
- Can use four.
- Bake at 375u0b0 for 30 to 40 minutes.
- Cool on rack for 10 minutes before turning out of pans.
- Cool completely.
