Caesar Salad
- 1 bunch romaine lettuce
- 1/4 c. red wine vinegar
- 2 anchovy fillets
- salt and pepper to taste
- 1/2 fresh lemon
- 1 coddled egg
- 1 Tbsp. Worcestershire sauce
- 1/4 c. olive oil
- 1/2 c. grated Parmesan or Romano cheese
- croutons
- 1 clove minced garlic
- Pour vinegar over anchovies in bowl; cut anchovies up with knife and fork, then mince with 2 forks.
- Let stand.
- Add salt and pepper to torn lettuce in bowl; toss.
- Let stand.
- Squeeze juice of lemon into another bowl; add coddled egg, Worcestershire sauce and minced garlic.
- Add minced anchovies and vinegar.
- Mix well before adding to lettuce.
- Toss well, then add olive oil and cheese; toss again.
- Add croutons; toss again and serve.
- Serves 2 as a dinner.
