Summer Berry Crisp
- 2 cups fresh blueberries
- 2 cups halved strawberries
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- Butter-flavored cooking spray
- 1/2 cup all-purpose flour
- 1/2 cup quick-cooking oats
- 1/3 cup sugar
- 1/3 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup chilled butter or stick margarine, cut into small pieces
- 2 cups vanilla fat-free ice cream
- Preheat oven to 375u0b0.
- Combine first 7 ingredients in a medium bowl; toss well. Spoon into an 8-inch square baking dish coated with cooking spray.
- Lightly spoon 1/2 cup flour into dry measuring cup; level with a knife. Combine flour, oats, 1/3 cup sugar, brown sugar, and cinnamon in a medium bowl; cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Spoon over berry mixture; coat top with cooking spray.
- Bake at 375u0b0 for 40 minutes or until topping is golden and filling is bubbly. Serve warm topped with ice cream.
