Pumpkin-Raisin Muffins
- 1 1/2 cups all-purpose flour
- 1/3 cup packed brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice
- 1/3 cup raisins
- 1 large egg, lightly beaten
- 1/2 cup canned pumpkin
- 1/3 cup orange juice
- 1 tablespoon stick margarine or butter, melted
- Cooking spray
- Preheat oven to 400u0b0.
- Combine first 6 ingredients in a large bowl; stir in raisins. Make a well in center of mixture. Combine egg and next 3 ingredients in a small bowl. Add to dry ingredients, stirring just until dry ingredients are moistened (batter will be very thick).
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 400u0b0 for 15 minutes.
