Almond Joy Cake(Makes Two 9 X 13-Inch Cakes.)
- 1 box chocolate cake mix (with pudding in mix)
- 14 oz. shredded coconut
- 1 c. Carnation evaporated milk
- 1 c. sugar
- 24 large marshmallows
- 1 1/2 c. sugar
- 1/2 c. Carnation milk
- 1 stick oleo
- 1 1/2 c. chocolate chips
- 1/2 c. toasted almonds
- Make cake according to directions.
- Pour into two 9 x 13-inch pans.
- Bake 20 minutes at 350u0b0.
- Mix 1 cup evaporated milk and 1 cup sugar.
- Bring to a boil and add marshmallows.
- Stir over low heat until dissolved.
- Add shredded coconut and pour over hot cake.
- Then heat to boiling 1 1/2 cups sugar, 1/2 cup Carnation milk and oleo.
- Remove from heat and add chocolate chips. Stir over low heat until melted and pour over cake.
- Sprinkle with toasted almonds.
