Oven Beef Stew
- 2 lb. beef, cut into 1-inch cubes
- 1/3 c. flour
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. oil
- 1 (16 oz.) can tomatoes
- 1 (10 oz.) pkg. frozen peas, thawed
- 1 (4 oz.) can mushrooms, drained
- 10 small whole onions
- 3 c. hot mashed potatoes
- 1/2 lb. Velveeta pasteurized process cheese spread, cubed
- Coat meat with combined flour and seasonings.
- Brown in oil; drain.
- Combine meat, tomatoes, peas, mushrooms and onions; mix well.
- Pour into 2-quart casserole.
- Cover; bake at 325u0b0 for 1 hour and 45 minutes or until meat and onions are tender.
- Combine potatoes and process cheese spread; spoon around edge of casserole.
- Broil until process cheese spread begins to melt. Makes 6 to 8 servings.
