Grilled Grouper With Pineapple Salsa
- 1 (15-ounce) can pineapple tidbits in juice, drained
- 1 small red bell pepper, finely chopped (about 1/2 cup)
- 2 tablespoons chopped fresh mint or parsley
- 1 tablespoon lime juice
- 2 teaspoons finely chopped fresh jalapeno pepper
- 1 teaspoon grated peeled fresh ginger or 1/4 teaspoon ground ginger
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 4 (4-ounce) grouper fillets
- Cooking spray
- Combine first 6 ingredients in a small bowl; stir in 1/4 teaspoon salt. Cover and set aside; chill overnight, if desired.
- Prepare grill.
- Sprinkle remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper over fish; coat lightly with cooking spray.
- Coat grill rack with cooking spray; place on grill over medium-hot coals (350u0b0 to 400u0b0). Arrange fish on rack or in a grill basket coated with cooking spray; grill, uncovered, 5 minutes on each side or until fish flakes easily when tested with a fork. Remove fish from grill; top with pineapple mixture.
