Strawberry Salad
- 2 (0.3 oz.) pkg. strawberry flavored sugar-free gelatin
- 1 1/2 c. boiling water
- 2 c. strawberries, sliced
- 1 (15 1/4 oz.) can pineapple tidbits in juice, drained
- 1/4 c. chopped pecans
- 1 c. low-fat sour cream
- cooking spray
- curly leaf lettuce leaves
- Combine gelatin and boiling water in a bowl; stir until gelatin dissolves.
- Add strawberries; chill 30 minutes or until partially set.
- Add pineapple and pecans; stir well.
- Spread half of gelatin mixture evenly into an 8-inch square pan coated with cooking spray; chill slightly.
- Stir sour cream into remaining gelatin mixture; spread evenly into pan.
- Chill 20 minutes or until set.
- Cut into squares and serve on lettuce leaves.
- Yields 9 servings.
