Irish Soda Bread(A St. Patrick'S Day Must!)
- 3 c. sifted flour
- 1/4 c. sugar
- 1 tsp. salt
- 3 tsp. baking powder
- 1 tsp. baking soda
- 1/4 c. margarine
- 1 egg, well beaten
- 1 c. raisins
- 1 1/3 c. buttermilk
- 2 Tbsp. caraway seed
- Measure and sift together directly into a large bowl the flour, sugar, salt, baking powder and soda. Cut shortening into flour with pastry blender until mixture is consistency of coarse corn meal. Add egg, raisins, buttermilk and seed.
- Turn dough onto a well floured board. Using lightly floured fingers, knead dough lightly, then shape into a well-greased 8-inch round pan. With a sharp knife, lightly floured, make a lengthwise and crosswise cut through the dough. Bake in oven at 400u0b0 about 40 minutes until golden brown.
