Chocolate Nut Crumb Cake
- 6 oz. chocolate chips (1 c.)
- 1/2 c. graham cracker crumbs
- 2/3 c. melted butter
- 1/2 c. chopped pecans
- 2 c. sifted flour
- 1 tsp. soda
- 1 tsp. salt
- 1/2 c. butter
- 1 1/2 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 c. buttermilk or sour milk
- While melting 1/3 cup of chocolate chips, grease and flour a 13 x 9-inch pan.
- Combine graham cracker crumbs and melted butter. Stir in pecans and 2/3 cup of chocolate chips.
- Combine flour with soda and salt.
- Cream the butter in a large bowl.
- Gradually add sugar; cream until light and fluffy.
- Add eggs, one at
- a time, beating after each addition.
- Blend in melted chocolate and vanilla.
- At low speed, add dry ingredients, alternating with buttermilk.
- Mix well after each addition.
- Sprinkle with crumbs and bake at 375u0b0 for 30 to 40 minutes until cake springs back when touched in center.
- Can be served with whipped cream.
