Tortilla Stackup
- 10 (8-inch) tortillas
- 3 c. shredded Jack cheese
- 3 c. shredded Cheddar cheese
- 1 1/4 c. sliced green onions
- 1 c. chopped green chilies (two 4-oz. cans), drained
- 2 Tbsp. melted butter
- garden salsa
- sour cream (optional)
- Preheat oven to 400u0b0.
- Butter 2 (8-inch) round cake pans. Place 1 tortilla in each pan.
- Combine cheeses.
- Sprinkle 2/3 cup cheese over each tortilla.
- Top with generous tablespoon of green onion and chilies.
- Repeat until there are 4 layers in each pan. Top with fifth tortilla. (Can be stacked as much as a day ahead and baked before serving.) Bake stacks, uncovered, for 20 minutes or until tops are lightly browned.
- Let cool 5 minutes.
- Invert serving platter over pan.
- Carefully flip and turn stackup onto platter.
- Repeat with second pan.
- Cut each stack into wedges. Garnish each platter with garden salsa and sour cream.
