King Ranch Chicken
- 1 large chicken
- 1 pkg. flour tortillas
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 jar jalapeno Cheez Whiz
- 1 onion, chopped
- 1 pkg. Longhorn Cheddar cheese, grated
- 1 can Ro-Tel tomatoes
- Boil chicken until tender.
- Debone.
- Set aside.
- Over medium heat, in large saucepan, mix both cans of soup, chopped onion, Cheez Whiz, half of the Longhorn cheese and Ro-Tel tomatoes (drained) until all ingredients are blended.
- Soak tortillas in chicken broth.
- Layer bottom of 9 x 13-inch casserole dish with tortillas.
- Next, put one layer of chunk chicken pieces.
- Top with layer of sauce.
- Repeat each layer.
- Top with remainder of cheese, grated.
- Bake for 30 to 45 minutes at 350u0b0.
