Zucchini Pepperoni Casserole
- 4 c. zucchini, chopped
- 1/2 c. onion, chopped
- 2 c. Mozzarella cheese, shredded
- 2 Tbsp. Parmesan cheese
- 3/4 c. pepperoni (small chunks)
- 1/4 c. oil
- 4 eggs, slightly beaten
- 1 c. Bisquick
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. basil
- 1/2 tsp. oregano
- Preheat oven to 350u0b0.
- Spray 9 x 13-inch pan with no-stick spray.
- Combine zucchini, onion, cheeses, pepperoni and spices in a large bowl.
- In another bowl combine eggs, oil and Bisquick. Add to zucchini mixture and stir well until all ingredients are coated.
- Spread in prepared baking dish.
- Bake 35 to 40 minutes, or until lightly browned.
- Serve with marinara sauce or spaghetti sauce on the side.
