Chinese Chicken Slaw
- 2 c. shredded green cabbage
- 2 c. shredded red cabbage
- 2 c. cubed, cooked chicken
- 1 (8 oz.) can sliced water chestnuts, drained
- 1 (8 oz.) can bamboo shoots
- 1 (8 oz.) pkg. frozen Chinese pea pods, thawed and drained
- 1/3 c. cubed red bell pepper
- 1/4 c. julienned carrots
- 1/4 c. sliced green onions
- 1 (3 oz.) can chow mein noodles
- 1 (8 oz.) bottle fat-free Italian dressing
- 1 tsp. soy sauce
- In a small bowl, whisk together dressing and soy sauce; set aside.
- In a large bowl, toss remaining ingredients except chow mein noodles.
- Pour dressing over salad and toss to coat well. Chill until ready to serve.
- Top with chow mein noodles before serving.
