Italian Turkey Meat Loaf
- 1 1/4 pounds ground turkey breast
- 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
- 2 large garlic cloves, minced
- 1 large egg, lightly beaten
- 2 tablespoons tomato paste with basil, garlic, and oregano
- 1/4 teaspoon salt
- 1/4 cup Italian-seasoned breadcrumbs
- Cooking spray
- 1/2 cup (2 ounces) shredded mozzarella-Asiago cheese blend with roasted garlic
- 1/2 cup plus 2 tablespoons warm marinara sauce
- Preheat oven to 375u0b0.
- Combine first 7 ingredients in a large bowl. Shape turkey mixture into a loaf; place into an 8 x 4-inch loaf pan coated with cooking spray.
- Bake at 375u0b0 for 35 minutes; sprinkle cheese over meat loaf. Bake an additional 10 minutes or until a thermometer inserted in center of loaf registers 160u0b0. Let stand 5 minutes; cut into 10 slices. Serve with warm marinara sauce.
