Orange-Watercress Salad
- 7 cups torn Bibb lettuce
- 2 cups trimmed watercress
- 1/4 cup sliced green onions
- 6 tablespoons fresh orange juice
- 2 tablespoons tarragon vinegar
- 2 teaspoons extra-virgin olive oil
- 2 teaspoons honey
- 1/2 teaspoon dry mustard
- 2 cups orange sections (about 4 oranges)
- 2 tablespoons chopped pistachios
- Combine first 3 ingredients in a large bowl; toss gently. Combine juice and next 4 ingredients (juice through mustard) in a small bowl; stir with a whisk. Drizzle vinaigrette over lettuce mixture; toss gently to coat.
- Place 1 cup lettuce mixture on each of 8 salad plates; top each with 1/4 cup orange sections and 3/4 teaspoon pistachios. Serve immediately.
