Orange-Watercress Salad

  1. Combine first 3 ingredients in a large bowl; toss gently. Combine juice and next 4 ingredients (juice through mustard) in a small bowl; stir with a whisk. Drizzle vinaigrette over lettuce mixture; toss gently to coat.
  2. Place 1 cup lettuce mixture on each of 8 salad plates; top each with 1/4 cup orange sections and 3/4 teaspoon pistachios. Serve immediately.
