Asparagus And Pine Nut Pizza
- 1/4 c. Parmesan
- 1/4 tsp. aspatita
- 1 Tbsp. pine nuts
- 4 pita breads
- 1 small bell pepper, chopped
- 9 oz. grated Mozzarella cheese
- 9 oz. asparagus, fresh, chopped, reserve heads
- 1 tsp. salt
- 1 c. basil leaves, packed
- 2 Tbsp. oil
- Cook asparagus in a bit of water until soft.
- In one tablespoon of olive oil, toast the pine nuts.
- In food processor, put the pine nuts with the olive oil.
- Add basil, rest of the olive oil, Parmesan, aspatita and salt.
- Blend until well mixed.
- Take asparagus from pot and drain.
- Do not overcook.
- Put pita breads on cookie sheet.
- Pour sauce over each pita bread, spreading evenly, leaving a border.
- Top each bread with a few asparagus pieces. Sprinkle each with bell pepper.
- Top with Mozzarella then Parmesan. Bake in 350u0b0 oven for a few minutes.
