Oat Bran Muffins(Low-Fat)
- 1 1/2 c. oat bran
- 1/2 c. whole wheat flour
- 3 Tbsp. brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 c. apple juice
- 1/4 c. skim milk
- 2 egg whites
- 2 Tbsp. canola oil
- 2 Tbsp. honey
- 2 ripe bananas, mashed
- 2 Tbsp. raisins
- Preheat oven to 400u0b0.
- Grease a 12-cup muffin tin with margarine.
- Combine oat bran, flour, brown sugar, baking powder, salt and cinnamon; set aside.
- In large mixing bowl, combine apple juice, skim milk, egg whites, oil and honey.
- Add flour mixture, bananas and raisins.
- Combine until just moistened.
- Fill tins and bake at 400u0b0 for about 20 minutes, until golden brown and a cake tester comes out clean.
