Spanakopita(Greek Spinach Pie)
- 1 pkg. frozen chopped spinach
- 1 small onion
- 1 1/2 lb. Ricotta cheese
- 4 eggs
- 1 Tbsp. all-purpose flour
- 1/2 tsp. nutmeg
- 1/2 tsp. white pepper
- 1 Tbsp. fresh dill, finely chopped
- 1 Tbsp. fresh parsley, finely chopped
- 4 scallions, finely chopped
- 1 1/2 lb. Feta cheese, crumbled
- 1/2 lb. butter
- 1/2 c. vegetable oil
- 1 lb. fillo dough
- Cook spinach; drain thoroughly.
- Finely chop small onion and saute in vegetable oil until limp.
- Add spinach to onion; cook until dry.
- Melt butter; combine with vegetable oil.
- Add rest of ingredients to dry spinach and onion mixture (important to be dry, or pie will be runny).
- In an 11 x 14-inch baking pan, begin to layer fillo dough, brushing each layer with butter-oil combination (important to use combination butter-oil, or pie will be greasy). Use only half pound of fillo dough for the bottom of the baking pan, then add spinach mixture.
- Layer rest of fillo dough on top of spinach mixture, brushing each with butter-oil combination.
