Sweet And Sour Pork
- 2 lb. lean pork, cut in 2-inch squares
- 2 Tbsp. shortening or oil
- 1/3 c. water
- 1 (20 oz.) can pineapple chunks
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/3 c. vinegar
- 1 Tbsp. soy sauce
- 1 c. sliced mushrooms
- 1/2 green pepper, sliced thinly
- 1/2 onion, sliced
- 1 (6 oz.) can water chestnuts
- 2 c. steamed rice
- Brown pork in oil.
- Add water; simmer 1 hour.
- While pork is cooking, drain juice from pineapple chunks into a saucepan.
- Add brown sugar, cornstarch, salt and vinegar.
- Cook until sauce has thickened.
- Stir in soy sauce, pineapple chunks, vegetables and cooked meat.
- Cook until vegetables are tender.
- Serve over steamed rice.
- Makes 8 servings.
