Smoky Chipotle Meat Loaf
- 1/3 cup barbecue sauce
- 2 canned chipotle chilies, seeded
- 1 tablespoon adobo sauce (from canned chilies)
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, minced
- 1 small onion, finely minced
- 1 1/2 pounds lean ground beef
- 1 cup quick-cooking oats
- 3 tablespoons ketchup
- Preheat oven to 350u0b0F. Mist a 9-by-5-inch loaf pan with cooking spray.
- Combine barbecue sauce, chipotles, adobo sauce, eggs, Worcestershire sauce, salt and pepper in a food processor and process until smooth. Transfer to a large bowl and add garlic, onion, beef and oats. Mix gently but thoroughly with your hands. Lightly pack mixture into loaf pan.
- Bake for 45 minutes. Carefully spread ketchup on top and bake for 10 minutes longer, or until an instant-read thermometer inserted into center reaches 160u0b0F. Let stand for 5 to 10 minutes before slicing.
