Monsteroni Salad
- 1 1/2 elbow macaroni, cooked
- 3 cups sliced mushrooms, diced
- 15 cherry tomatoes, halved
- 1 cup yellow or red pepper, sliced
- 1/2 cup green onions, chopped
- 3/4 cup sliced black olives, drained
- 1 cup crumbled feta cheese
- Optional: 3/4 cup pepperoni, diced
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon pepper
- 3/4 teaspoon sugar
- In a large bowl, combine macaroni, vegetables, cheese and pepperoni, if desired; set aside. Whisk together remaining ingredients in a small bowl. Pour over macaroni mixture and toss until evenly coated. Cover and chill 2 hours to overnight.
