Chicken Pasta Primavera
- 8 oz. vermicelli
- 1 1/2 c. commercial salad dressing, divided (use fat free)
- 3 c. cubed, cooked chicken
- 1 (10 oz.) pkg. frozen snow pea pods, thawed
- 15 fresh mushrooms, sliced
- 3/4 c. pine nuts (or sunflower seeds)
- 1/3 c. chopped fresh basil
- 1/4 c. chopped fresh parsley
- 1/4 tsp. pepper
- 12 cherry tomatoes, halved
- Cook pasta according to package directions; drain.
- Rinse with cold water; drain.
- Combine pasta and 1/2 cup salad dressing, tossing to coat; cover and chill for 3 hours.
- Combine chicken, remaining 1 cup salad dressing and remaining ingredients except tomatoes, tossing well.
- Cover and chill 3 hours.
- When ready to serve, combine pasta mixture, chicken mixture and cherry tomatoes, tossing well.
- Yield:
- 6 servings.
