Texas Chili Meat Loaf
- 1 (15 oz.) can dark red kidney beans
- 1 c. oats
- 1/2 c. finely chopped onion
- 1/4 c. finely chopped green pepper
- 1 (7 1/2 oz.) can whole tomatoes, cut up
- 1 egg, slightly beaten
- 2 Tbsp. chili powder
- 1 1/2 tsp. garlic salt
- 1/2 tsp. red pepper sauce
- 1 1/2 lb. lean ground beef
- 1 c. shredded Cheddar cheese
- 1/2 c. crushed corn chips
- Drain kidney beans; reserve liquid.
- Stir together beans, oats, onion, green pepper, tomatoes and egg.
- Add chili powder, garlic salt and red pepper sauce; mix well.
- Add ground beef and 3/4 cup Cheddar cheese.
- Pat mixture into a meat loaf pan.
- Bake in 350u0b0 oven for 60 minutes.
- Remove from oven.
- Pour reserved liquid over meat loaf.
- Sprinkle with remaining 1/4 cup Cheddar cheese and corn chips.
- Return to oven for an additional 10 minutes.
