Costatelle Di Maiale(Pork Chops)
- 4 thick loin pork chops
- 1/2 c. vinegar
- 1/2 c. lemon juice
- 1 c. bread crumbs
- 5 Tbsp. olive oil
- 1 Tbsp. grated cheese (your choice)
- 1 Tbsp. dry parsley
- 1 Tbsp. dry basil
- 2 large eggs
- 1 chopped clove garlic
- 1 c. flour
- 1 c. water
- salt and pepper to taste
- Marinate chops in vinegar, water and lemon juice for 2 hours in shallow pan.
- Remove from pan and drain and dry.
- Beat eggs lightly.
- Mix garlic, bread, basil, parsley, cheese, salt and pepper.
- Roll chops in flour, dip in eggs, then in bread crumb mixture.
- Fry in hot oil for about 5 minutes on both sides or until brown.
- Lower heat, cover pan and continue frying slowly for 20 minutes until tender.
- Serves 4.
