Walnut-Spice Cookies
- 2 cups all-purpose flour
- 1/2 cup sifted powdered sugar
- 2 1/4 teaspoons baking powder
- 1 teaspoon pumpkin-pie spice
- 1/4 teaspoon salt
- 1 cup packed dark brown sugar
- 3 tablespoons vegetable oil
- 2 tablespoons molasses
- 3 large egg whites
- 3/4 cup chopped walnuts, toasted
- Cooking spray
- Preheat oven to 350u0b0.
- Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (flour through salt) in a medium bowl. Combine the brown sugar, oil, molasses, and egg whites in a large bowl, stirring well with a whisk. Add flour mixture; stir until well-blended. Stir in walnuts. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350u0b0 for 10 minutes. Cool 3 minutes on pans. Remove from pans; cool on wire racks.
