Banana Orange Muffincake
- 1 1/2 c. flour
- 1 c. uncooked oats
- 1 Tbsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt (optional)
- 1/3 c. brown sugar
- 2/3 c. mashed bananas
- 1/2 c. orange juice
- 1/3 c. margarine
- 1 egg, lightly beaten
- 1/2 tsp. orange peel
- 1 Tbsp. orange juice
- 1/2 tsp. orange peel
- 1/2 c. powdered sugar
- Heat
- oven
- to
- 400u0b0.
- Grease
- bottom
- of
- 9-inch round spring-form
- pan
- or
- cake pan.
- Combine dry ingredients.
- Add combined banana, juice, margarine, egg and grated orange peel, mixing just until moistened.
- Pour into prepared pan.
- Bake 30 to 35 minutes or until golden brown.
- Cool 10 minutes on wire rack; remove from pan.
- Combine remaining ingredients; drizzle evenly over
- cake while still warm.
- Makes 12 servings.
- Each serving (1/12 of cake) has 190 calories, 32 g carbohydrates, 3 g protein and 6 g fat.
