Cool Rise Dinner Rolls
- 2 1/2 to 3 c. unsifted flour
- 1/4 c. sugar
- 3/4 tsp. salt
- 1 pkg. active dry yeast
- 1/2 c. milk
- 1/3 c. water
- 2 Tbsp. margarine
- 1 egg
- 1 Tbsp. liquid shortening
- In a large mixing bowl, thoroughly mix 1 cup flour, sugar, salt and yeast.
- Combine milk, water and margarine in small saucepan.
- Heat over medium heat until bubbles appear around the edge of the liquid (do not boil).
- Gradually add hot liquid to dry ingredients and beat for 2 minutes at medium speed of electric mixer, scraping bowl occasionally with rubber scraper.
- Add egg and 1/2 cup flour.
- Beat on high speed for 2 minutes, scraping bowl occasionally.
- By hand, using wooden spoon, stir in enough additional flour to make a stiff dough. Turn out onto a lightly floured board.
- Knead until smooth and elastic, about 8 to 10 minutes.
- Cover with plastic wrap, then a towel.
- Let rest 20 minutes.
- Punch dough down. Shape as directed.
