Tortilla Pie
- 16 oz. ground turkey
- 8 (6-inch) tortillas
- 10 oz. box frozen chopped spinach, thawed and drained
- 1 large onion
- 2 cloves garlic, minced
- 2 small cans chopped green chilies
- 1 (8 oz.) can tomato sauce
- 3 Tbsp. plain bread crumbs
- 1 c. cottage cheese
- 3 oz. shredded Monterey Jack cheese
- 2 tsp. chili powder
- 1/2 tsp. cumin
- Mix spinach and cottage cheese; set aside.
- Brown turkey, onion and garlic, then add chilies, tomato sauce, bread crumbs, chili powder and cumin.
- Simmer 10 minutes.
- Layer in 13 x 9-inch pan: tortillas, 1/3 meat, 1/3 spinach and 1/3 cheese.
- Repeat until done.
- Bake at 350u0b0 for 40 minutes covered and 10 minutes uncovered.
