Easy Mexican Dinner
- 2 lb. ground beef
- 1 (16 oz.) can kidney beans, drained
- 1 (15 oz.) can mild taco sauce
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. instant minced onion
- 1 (6 oz.) pkg. corn chips
- 2 c. Cheddar cheese, grated
- 1 (8 oz.) carton sour cream
- Brown ground beef in skillet and drain.
- In mixing bowl, combine beans, taco sauce, tomato sauce and onion.
- Set aside 1 cup of corn chips and 1/2 cup Cheddar cheese.
- Add remaining cheese and corn chips to bean mixture.
- Add meat to mixture.
- Pour into greased 9 x 13-inch pan.
- Bake, uncovered, at 375u0b0 for 25 minutes. Remove from oven and spread top with sour cream.
- You may swirl sour cream into mixture.
- Sprinkle top with reserved cheese and chips.
- Return to oven for 4 to 5 minutes or until cheese melts. Serves 6 to 8.
