Cucumbers With Pasta

  1. Peel and seed the cucumbers.
  2. Dice the flesh into 1/4-inch pieces and toss with 1/2 teaspoon salt and 2 tablespoons wine vinegar.
  3. Let set for 30 minutes and drain.
  4. Peel, seed and dice the tomatoes and combine with the cucumbers, onions, garlic, herbs and olive oil.
  5. Taste and add more vinegar, salt and pepper if necessary.
  6. Boil the spaghetti in several quarts of salted water until cooked through, but still chewy.
  7. Toss the hot pasta with the cucumber-tomato mixture, serve with grated Parmesan cheese.
