Surprise Carrot Cake
- 2 1/4 c. Softasilk cake flour
- 1 1/2 c. sugar
- 3 eggs
- 3/4 c. mayonnaise or salad dressing
- 2 tsp. baking soda
- 1 (8 oz.) can crushed pineapple in juice (undrained)
- 1/2 tsp. salt
- 3/4 c. chopped pecans
- 1/2 tsp. ground allspice or ginger
- 2 c. finely shredded carrots (about 4 medium)
- Cream Cheese Frosting (recipe follows)
- Grease and flour 2 round pans (9 x 1 1/2-inch).
- Beat all ingredients except carrots, pecans and frosting in a large bowl on low speed for 30 seconds, scraping bowl constantly.
- Beat on medium speed 3 minutes, scraping bowl occasionally.
- Stir in carrots and pecans.
- Pour into pans.
- Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean; cool 10 minutes.
- Remove from pans; cool layers completely.
