Cioppino(Pronounced Chee-O-Pee-No - Italian Seafood Stew)
- 1/4 c. chopped green pepper
- 2 Tbsp. finely chopped onion
- 1 clove garlic, minced
- 1 Tbsp. olive oil
- 1 (16 oz.) can tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1/2 c. dry red wine
- 3 Tbsp. chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. crushed, dried oregano
- 1/4 tsp. crushed, dried basil
- dash of pepper
- 1 lb. frozen perch fillets
- 1 (7 1/2 oz.) can minced clams
- 1 (4 1/2 oz.) can shrimp, drained
- In a large saucepan, cook green pepper, onion and garlic in olive oil until tender, but not brown.
- Add undrained tomatoes, tomato sauce, wine, parsley, salt, oregano, basil and pepper; bring to boiling.
- Reduce heat, cover and simmer for 20 minutes.
