Mandarin Salad
- 1/2 c. sliced almonds
- 3 Tbsp. sugar
- 1/2 tsp. salt
- dash pepper
- 1 Tbsp. chopped parsley
- 2 Tbsp. sugar
- 2 Tbsp. vinegar
- dash tabasco sauce
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- 1 c. chopped celery
- 2 whole green onions, chopped
- 1 can (11 oz.) mandarin oranges, drained
- In a small saucepan over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved (be careful, they will burn easily).
- Cool.
- Store in air tight container.
- In a small bowl, mix together the salt, pepper, parsley, sugar, vinegar and tabasco sauce for the dressing.
- Set aside.
- Mix lettuce, celery and onions.
- Just before serving, add almonds and oranges.
- Toss with dressing.
- Serves 4-6.
