Mandarin Salad

  1. In a small saucepan over medium heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved (be careful, they will burn easily).
  2. Cool.
  3. Store in air tight container.
  4. In a small bowl, mix together the salt, pepper, parsley, sugar, vinegar and tabasco sauce for the dressing.
  5. Set aside.
  6. Mix lettuce, celery and onions.
  7. Just before serving, add almonds and oranges.
  8. Toss with dressing.
  9. Serves 4-6.
