Mrs. Ledbetter'S Chocolate Pie(Recipes From My Just Desserts)

  1. Melt chocolate and butter, stirring to blend, in top of double boiler or microwave on High, about 1 minute.
  2. Cool slightly.
  3. In medium bowl, beat eggs with electric mixer until light and fluffy. Add sugar, cornstarch and salt; beat until smooth.
  4. Blend in chocolate mixture.
  5. Gradually add evaporated milk and vanilla, mixing until smooth.
  6. Pour into pie shell.
  7. Sprinkle coconut and pecans over filling.
  8. Bake in 350u0b0 oven for 50 to 60 minutes or until top is puffed and slightly browned.
  9. If top browns too quickly, cover loosely with aluminum foil during last 10 minutes of baking.
  10. Makes 8 to 10 servings.
