Mrs. Ledbetter'S Chocolate Pie(Recipes From My Just Desserts)
- 1 (4 oz.) bar German sweet chocolate
- 1/2 c. margarine
- 2 eggs
- 1 1/2 c. granulated sugar
- 3 Tbsp. cornstarch
- 1/8 tsp. salt
- 1 (12 oz.) can evaporated milk
- 1 tsp. vanilla
- 1 (10-inch) pie crust, unbaked
- 1 (3 1/2 oz.) can flaked coconut
- 1/2 c. chopped pecans
- Melt chocolate and butter, stirring to blend, in top of double boiler or microwave on High, about 1 minute.
- Cool slightly.
- In medium bowl, beat eggs with electric mixer until light and fluffy. Add sugar, cornstarch and salt; beat until smooth.
- Blend in chocolate mixture.
- Gradually add evaporated milk and vanilla, mixing until smooth.
- Pour into pie shell.
- Sprinkle coconut and pecans over filling.
- Bake in 350u0b0 oven for 50 to 60 minutes or until top is puffed and slightly browned.
- If top browns too quickly, cover loosely with aluminum foil during last 10 minutes of baking.
- Makes 8 to 10 servings.
