Pasta Stew(Vegetarian)
- 1 yellow onion, cut in chunks
- 2 cloves garlic, crushed
- 2 (15 oz.) cans stewed tomatoes
- 1 (15 oz.) can tomato sauce
- 1 c. chopped zucchini
- 1 c. corn kernels
- 1 (15 oz.) can garbanzo beans, drained and rinsed
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 Tbsp. soy sauce
- black pepper to taste
- 4 oz. spaghetti, broken in half
- 2 c. chopped spinach or romaine lettuce
- In a large pot, saute the onion and garlic in a small amount of water until soft.
- Add the tomatoes, tomato sauce, zucchini, corn, beans and seasonings.
- Cook for about 15 minutes.
- Add spaghetti and cook until tender, about 10 minutes.
- Add the greens and stir until wilted.
- Serve immediately.
- Makes 4 servings.
