Chocolate Mandel Bread
- 1 (6-ounce) package semi-sweet chocolate morsels
- 4 eggs, beaten
- 1 1/2 cups sugar
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup finely chopped almonds
- Place chocolate in top of a double boiler; bring water to a boil. Reduce heat to low, and cook, stirring frequently, until chocolate melts. Cool.
- Combine eggs, sugar, oil, and vanilla in a large mixing bowl; beat until smooth. Add melted chocolate, mixing well.
- Combine flour, baking powder, and salt; add to chocolate mixture, beating well. Stir in almonds. Pour into two greased 8- inch square baking pans. Bake at 350u0b0 for 20 minutes. Cool 5 minutes in pan, and cut into 4- x 1/2-inch bars.
- Place bars on ungreased baking sheets. Bake at 275u0b0 for 10 minutes; turn bars, and bake 10 minutes or until dry and crusty.
