Pot Roast Barbecue Style
- 1 onion, chopped
- 1 can tomato sauce
- 1/2 c. bouillon
- 5 lb. beef pot roast
- 1/2 c. catsup
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp. garlic powder
- 1 tsp. salt
- 1/2 tsp. paprika
- 2 Tbsp. shortening
- 1/4 c. vinegar
- 1 tsp. mustard
- Combine onion, garlic, bouillon, tomato sauce, salt and pepper.
- Pour over meat in a large bowl.
- Marinate overnight in refrigerator.
- Heat shortening in heavy skillet, remove meat from marinade and brown on both sides in hot fat.
- Blend catsup, vinegar, Worcestershire and mustard into marinade and pour over meat.
- Cover pan and simmer until meat is tender, about 2 to 2 1/2 hours.
- Gravy may be thickened slightly.
