Mediterranean Turkey Sandwiches
- 1 pkg. Mr. Turkey lean ground turkey
- 1 medium green bell pepper, sliced
- 1 medium onion, sliced
- 1/4 tsp. garlic powder
- 1/4 tsp. dried oregano leaves
- 1/4 tsp. pepper
- 1 c. plain nonfat yogurt
- 1 1/2 tsp. lemon juice
- 5 (6 to 7-inch) pocket breads, halved
- Spray skillet with nonstick cooking spray.
- Heat over medium-high heat about 30 seconds.
- Add ground turkey, bell pepper and onion; cook about 3 to 5 minutes, stirring until turkey is lightly browned.
- Add 1/4 cup water, garlic powder, oregano and pepper.
- Cook 3 to 5 minutes, or until water is absorbed.
- In a small bowl, blend yogurt and lemon juice.
- Fill each pocket bread half with meat mixture.
- Add yogurt mixture.
- Yields 5 servings.
