Mexican Style Pasta Salad
- 1/2 lb. medium pasta shells
- 1/3 c. mayonnaise
- 1/2 c. mild to medium salsa
- 2 to 3 Tbsp. balsamic vinegar
- 1 (7 oz.) can tuna fish
- 1/4 c. chopped red onions
- 1/4 c. chopped celery
- 1/4 c. fresh or frozen peas
- 1/4 c. grated carrots
- 1/4 c. chopped broccoli
- 1/4 c. chopped tomatoes
- 1/4 c. whole kernel corn
- dash of cayenne pepper
- a few grinds of fresh pepper
- dash of Tabasco sauce
- Cook shells.
- Rinse and drain.
- Mix in a large mixing bowl. Combine all ingredients except spices and mix thoroughly and then add spices to taste.
- Feel free to add your favorite veggies and serve with corn bread or garlic bread.
