Tart Lemon Squares
- 1 c. flour
- 1/3 c. sifted powdered sugar
- 1/4 c. plus 1 Tbsp. chilled margarine, cut into small pieces
- vegetable cooking spray
- 1 c. sugar
- 2 Tbsp. flour
- 1 1/2 tsp. grated lemon rind
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 egg whites
- 1 egg
- 7 Tbsp. fresh lemon juice
- 1/4 tsp. butter flavoring
- 2 Tbsp. powdered sugar
- Combine 1 c. flour and 1/3 c. powdered sugar in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal.
- Press mixture firmly and evenly into the bottom of an 11 x 7 baking dish coated with cooking spray.
- Bake at 350u0b0 for 20 minutes or until lightly browned.
