Broccoli Cheese Soup
- 1 c. instant nonfat dry milk
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. garlic powder
- 2 1/4 c. water
- 1 can condensed chicken broth (undiluted)
- 1/4 c. margarine
- 1/4 c. chopped scallions or grated onions
- 1 pkg. frozen broccoli, defrosted
- 1 1/2 c. Swiss cheese, shredded (6 oz.)
- chopped parsley for garnish
- Combine dry milk, flour and seasonings in a 3-quart heavy pot. Stir in water and condensed chicken broth until smooth.
- Bring to boil over medium heat.
- Stir constantly.
- Boil and stir for 1 minute.
- Briefly saute onion in margarine.
- Stir onion mixture and broccoli into thickened mixture.
- Continue to stir until broccoli is heated.
- Pour into soup serving bowl.
- Sprinkle cheese over top.
- Add parsley as garnish.
- Serve immediately.
