Carotene Rich Minestrone Soup(Heart Healthy)
- 1 Tbsp. red wine
- 1/2 c. thickly sliced leek, white and tender
- 2 c. water
- 1/2 c. cubed new potatoes
- 1 can water
- 1 bay leaf
- 1/4 tsp. oregano
- 1/2 tsp. salt
- 2 c. shredded escarole or spinach
- 2 Tbsp. minced parsley
- grated Parmesan cheese
- 1/2 c. thinly sliced onion
- 1 (16 oz.) can or 2 c. canned Italian plum tomatoes with juice
- 1/2 c. sliced carrots
- 1 can Great Northern white beans
- 1/2 c. chili mac noodles
- 1/4 tsp. thyme
- 1/4 tsp. sage
- 1/2 freshly ground black pepper
- 1 c. broccoli florets
- 1/4 c. shredded fresh basil leaves
- In soup pot, melt butter with oil.
- Add onion and leek and cook until tender.
- Add tomatoes and 2 cups water.
- Stir in carrots, potatoes, bay leaf, thyme, oregano, sage, salt and pepper.
- Heat to a boil; reduce heat to medium and simmer for 35 minutes.
- Add beans, 1 can water, chili mac noodles, escarole, broccoli, parsley and basil.
- Cook an additional 20 minutes.
