Mediterranean-Style Lentils And Rice
- 1 tablespoon olive oil
- 1 1/2 cups chopped onion (2 medium)
- 5 garlic cloves, minced
- 1 cup dried lentils
- 1 cup long-grain brown rice
- 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
- 1/2 cup chopped kalamata olives
- 2 tablespoons capers
- 1/2 teaspoon salt
- 4 cups water
- 1/4 cup chopped fresh basil
- 2/3 cup (2.7 ounces) crumbled reduced-fat feta cheese
- Heat oil in a medium saucepan over medium heat. Add onion and garlic; saute 5 minutes or until tender. Add lentils and next 6 ingredients. Bring to a boil; cover, reduce heat, and simmer 50 minutes or until rice is tender and liquid is absorbed. Spoon into individual bowls, and sprinkle evenly with basil and cheese.
