Fried Rice

  1. Heat 1 tablespoon oil in a skillet or wok at medium-high heat 2 minutes.
  2. Add eggs; cook 1 minute on each side.
  3. Remove from skillet; chip and set aside.
  4. Heat remaining 3 tablespoons oil in skillet or wok; add ham or pork and stir-fry 1 to 2 minutes or until golden.
  5. Add bell peppers and onions; stir-fry 5 minutes. Add peas and next 3 ingredients; stir-fry 3 to 4 minutes or until thoroughly heated.
  6. Stir in reserved egg and sprinkle with green onions.
  7. Yield:
  8. 4 servings.
