One Layer Choc-Choc Cake
- 1 (4 oz.) pkg. Baker's semi-sweet chocolate or 1 (4 oz.) pkg. German sweet chocolate, broken in pieces
- 6 Tbsp. butter or margarine
- 3 Tbsp. all-purpose flour
- 3 eggs, separated
- 4 Tbsp. sugar
- Chocolate Glaze
- Melt chocolate and butter in saucepan over very low heat. Stir constantly until smooth.
- Remove from heat.
- Stir in flour. Blend in yolks, one at a time. Beat egg whites until foamy throughout.
- Gradually beat in sugar.
- Continue beating until soft peaks will form.
- Gently fold chocolate mixture into egg whites. Blend thoroughly.
- Pour in greased and floured 8-inch layer pan. Bake at 350u0b0 for 20 minutes.
- Cool 10 minutes (cake will continue to cool upside on rack).
- Spread top and sides with Chocolate Glaze. Garnish with chopped pistachios.
