Pattie'S Fresh Spinach Salad For 6

  1. Wash spinach several times, changing water each time; drain well.
  2. Refrigerate until needed (cover if keeping overnight). Slice carrots thinly lengthwise, then again lengthwise into "toothpick" size.
  3. Slice onions very thinly; separate into rings. Slice olives thinly; mix with pimentos and set aside (refrigerate if keeping overnight).
  4. Mix onions and carrots with dressing; cover and refrigerate.
  5. Place spinach in serving bowl.
  6. Top with all vegetables.
  7. Add dressing.
  8. Toss several times before serving.
