Banana Date Bread
- 2 1/2 c. sifted flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 tsp. ground ginger
- 1/4 tsp. ground mace
- 3/4 c. light brown sugar, packed
- 1/2 c. chopped walnuts
- 2 eggs, lightly beaten
- 1/4 c. buttermilk
- 3/4 c. butter, melted
- 1 c. pitted dates, chopped
- 1 c. ripe mashed bananas (approximately 3)
- Sift together first 6 ingredients.
- Add sugar and nuts.
- In separate bowl, mix remainder of ingredients.
- Add to dry ingredients, stir until moistened.
- Turn into greased 9 x 6-inch loaf pan.
- Bake in a moderate oven at 375u0b0
- for 1 to 1 1/4 hours or until cake tester inserted in center comes out clean.
- Cool in pan 10 minutes.
- Remove to cake rack to finish cooling.
- Store overnight before slicing.
