Mark'S Minestrone

  1. Saute garlic and onion in olive oil until translucent.
  2. Add salt, pepper, basil, oregano, tarragon, rosemary, carrots and wine.
  3. Cover and cook 5 to 10 minutes, stirring occasionally.
  4. Add green pepper, stock, puree and beans.
  5. Cover and simmer 30 minutes.
  6. Add chopped tomatoes, cooked pasta and zucchini and simmer for another 15 minutes.
  7. Makes 6 quarts.
