Black Bottom Cupcakes
- 1 (8 oz.) pkg. cream cheese
- 1 unbeaten egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 c. (6 oz.) semi-sweet morsels
- 1 1/2 c. sifted flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. cooking oil
- 1 tsp. vinegar
- 1 tsp. vanilla
- chopped nuts
- Combine in mixing bowl the cream cheese, egg, sugar and salt; beat well.
- Stir in semi-sweet morsels.
- Sift together flour, sugar, cocoa, soda and salt.
- Add water, oil, vinegar and vanilla to flour mixture and beat until smooth.
- Fill cupcake pans 1/3 full of chocolate batter.
- Top each with a heaping teaspoon of cream cheese mixture.
- Sprinkle with sugar and chopped nuts.
